Poplar Forest Honey

Our honey comes from a stand of hundred-foot tulip poplars outside Leesburg. We harvest in late summer and only take what the bees can spare. Small batch, sold locally.

What It Tastes Like

Tulip poplar honey is dark amber — darker than the clover honey you find at the grocery store, with a richer, more complex flavor. It has a slight molasses quality without being heavy, and finishes clean.

The character shifts depending on the season. Early summer honey is lighter, with floral notes from the orchard blooms and clover. Late summer honey picks up the poplar and blackberry, deepening the color and adding body.

We don’t blend batches or standardize the flavor. Each jar is what the bees brought in during that harvest — a snapshot of what was blooming in our corner of Loudoun County that season.

How We Harvest

We pull frames only when the bees have capped at least 80% of the cells — that means the moisture content is right and the honey will keep without processing. We uncap by hand with a heated knife, spin in a small two-frame extractor, and strain through a coarse mesh to catch wax bits.

That’s it. No heating, no pasteurizing, no ultra-filtering, no blending. The honey goes from the extractor into jars. It will naturally crystallize over time — that’s normal, and you can gently warm the jar in water to reliquefy it.

We leave each hive 60 to 80 pounds of honey for winter, depending on the colony. In a bad year, we don’t harvest at all. The bees come first.

We harvest once a year in late summer and sell until we run out. Quantities are small — when it’s gone, it’s gone until next season.
